Yummy Quick Sauce! Chickpeas, Prawns & Coconut Sauce

Hello Loves,


How are you? How has it been!!! It’s been a while I know! My inspiration for cooking is coming back. Work and life balance is coming back too 🥳🎉!


This meal is perfect for a quick dinner!


Here we go! You will need…

Ingredients

*1/2 can of coconut milk

*1 can of chickpeas

*1 can of chopped tomato

*1 scotch bonnet pepper (optional) if you are not into spicy food.

*Large bunch of leek -you can chop

this in tiny rounds.

*1 onion

*A pack of peeled prawns

*1 tsp of grounded ginger & 1tsp of garlic (pls use fresh ones if you have them).

*1-2tsp of oil

*Chicken knorr x2cubes


Utensils

*Large frying pan

*Chopping board

*Knife


Let’s get started:

  • *In a bowl, rinse/pat dry the prawns.

  • *Season prawns with garlic and ginger.

  • *On a medium heat, place the pan on.

  • *Add 1-2tsp of oil in a pan- add prawns, chopped onions and leak/chopped bonnet pepper.

  • *Sauté for 5mins.

  • *Add knorr and additional seasoning such as basil, scotch bonnet pepper or black pepper.

  • *Add tomato, coconut milk and chickpeas -simmer on a low heat for 8mins. While stirring frequently. Cook for another 5-10mins until sauce thickens.



Voila! Food is ready!


Served with rice or eat with fajitas or other options you prefer!!
