Coconut Milk and Potatoes

Hello Sweet People,

Hope you have had a lovely week and not too hectic..

I thought to share a wonderful healthy meal with you.

You can have this as a Sunday meal or anytime.

I am not sure if you get tired of the same thing? Like me I like to spice things up.

I have decided to use coconut milk as my gravy!!! Whoot.

Its delish.

The amazing thing is, its super easy and super quick.

What you will need:

Potatoes (I used Tesco finest version)

Mixed vegetable

Coconut milk

Coconut powder (2full tsp)

Pinch of salt

1tsp of oil(I used mustard) - Optional

1tsp of crushed pepper (optional)

1/2tsp of curry (optional)

Cooking:

Place your saucepan over a low heat, add little boiled water.

In boiled water, add 1tsp of oil, add crushed chilli and curry.

Stir and add potatoes, cook over a low heat for about 15mins-20mins.

Keep checking to ensure it is to your taste and consistency. You can add boiled water as necessary too.

Over a pan on a low heat, add your coconut milk, I used half of a can.

Add your 2tsp of coconut powder (essential) I got mine from Tesco.

Leave for 2mins, stir when it begins to bubble up (do you get)?

Allow to cook for 5mins until sauce thickens. You can add a pinch of salt, some crushed chilli.

Simmer your mixed veg over a low heat.

Tip: If your mixed veg is frozen, place it in a pan over a low heat. It will cook without water,

That is it.....

I ate mine with chicken!!!

You can eat yours with anything like Salmon?
