SWEET POTATO!!!

Hello You,

How has your week been? Boring,Fun, Busy or abit of everything in between.

Well not too worry, I have the perfect recipe to spice or maybe try to spice up your

weekend abit better.

This recipe is super easy and healthy too.

You will need

Sweet potato (I used the purple type)

Kale(handful)

Mushrooms (I used 5 large ones)

Coconut milk

Coconut powder (optional)

Salmon(optional)

1tsp of curry powder,

1tsp of crushed chilli

1tsp of oil(I used mustard)

Cooking:

Chop your sweet potato, in a bowl mix with chilli,curry and oil.

Wrap in a foil paper, place in oven Gas 6 OR 180degrees to cook for 40-45mins.

Rinse and chop your mushrooms, place in a large wok, add ½ can of coconut milk or less,

For thickness, add 2 tbsp of the curry powder.

Stir, add a pinch of salt and you should be done in 5mins. Cook on low heat.

Boil water in kettle, place small boiled water in a pot over a low heat, rinse your

handful of kale, chop and place in pot to simmer. Simmer to your consistency.

Finally, DINNER is ready...

Tip: Check on your potato after 30mins to ensure it is to your consistency.

I had mine with luscious Salmon and really soft cheese. It was gorgeously yummy. X
