Sweet Potatoe Vegetable

Hello Beautiful People,
I hope you have had a fantastic week.
I can only apologise for the inconsistency in uploading a food menu but I will keep trying.
So something healthy for the week. This meal is so versatile and can be eaten as lunch or dinner.
What you will need:
Sweet potatoe (I used purple and white skin).
2medium size
Mixed veg
Lamb(optional)
Spinach
Salt
Everday seasoning (optional)
or Mixed spice
Crushed chilli(optional)
Coconut powder
Coconout oil
Onions(half of a whole onion is fine).
Peel skin off sweet potaoes with knife and cut into cubes.
In a pan, place boiling water, for colour you can add curry or tumeric (I used a tiny bit of timeric tip of a spoon).
Simmer the sweet potatoes for 5-8mins, insert fork into one cube to test for texture (you want just between soft and hard).
In a small pan, place mixed vegetable (amount is up to you).
Add a bit of warm water just enough but not covering the vegetable. Allow to simmer for 3mins-5mins until water is not longer visible. Or you can simply microwave it.
Get a large pan or wok, add 1/2tsp of coconut oil, add chopped onions, mixed veg, lamb, add pinch of salt, 1/2 of everyday seasoning and 2 x sprinkles of liquid maggi . Sauter for 3mins and add sweet potatoe.
In another pan, with a large spoon add warm water and 2tbs of coconut milk and 1/4 of parsely(you can add more water to reduce thickness or more coconut milk to increase thickness). Simmer for 3mins and add sauce to the sweeet potatoe mix. Cover for 3-5mins.
Voila!!! Dinner is ready...
