Nigerian Style 'Efo Elegusi'- Healthy Version

Hello Everyone,

I hope you are all well.

Sigh! I need to be consistent.

Our recipe today is super simple and healthy too.

In Yoruba culture, 'efo elegusi' is a popular dish/vegetable soup made with vegetables and melon seeds. Super rich in nutrients, iron and vitamins. You are welcome to add fish or meat to give it that extra yummy taste.

Traditionally, spinach is used with a huge dose of palm oil but I am not using spinach/palm oil.

I find spinach to be light and wrinkly and to get a full pot you will need loads of it.

My desire to explore variety and to save stress led me to greens and kale.

Prep and cooking can be 1 hour - 30 mins.

Ingredients you will need:

-A bag of Greens from Sainsburys will do

-A bag of Kale

-Assorted dried fish e.g. smoked crayfish, catfish, bongafish, shawafish, stockfish etc.

-100g of Egusi assorted version

-Additional fish or meat. I used Salmon

-2-3 cans of tomato

- 2 x red pepper

- 1 huge red onion

- 2 x scotch bonnet pepper -you can reduce this for your palate.

-2 x 2 chicken knorr cube

-Extras 1/2 of nutmeg, 1/2 of curry powder

-Pinch of salt to taste (optional)

-clove of garlic/ginger (optional)

-2 tsp of olive oil

-1/2 cup of water (optional)

Cooking equipment required cook:

-Large pot to cook the sauce/vegetables

-Pan to saute the onions

-Chopping board to slice the onions

-Blender to blend onion, pepper, tomato, clove, ginger etc.

-Bowl to make a paste by adding a little boiling water to the egusi.

-Chopping board to cut vegetables - wash vegetables and finely chop it especially the greens

-Large bowl to rinse/sit in for a while vegetables

-A bowl with assorted dried fish placed in warm water to sit for a while e.g 5mins

Cooking time/prep

-Place blended sauce into pot over a low heat to simmer for 10-15mins until water content is dry.

This should have visible holes in it.

-Add knorr cubes, curry powder, nutmeg,stir slightly and move from the heat.

-Place a pan over the heat, add oil, chopped onions, garlic and ginger, saute for 5mins.

-Remove pan, place the pot of sauce back on the low heat and pour in all the saute ingredients.

-Pour in egusi paste and stir

-Add vegetables

-Add 1/2 cup of water optional - if you prefer more water etc.

-Cover and simmer for 10-15mins.

-Add salmon or assorted meat for 5mins.

Voila food is ready.

You are welcome to serve with a 'swallow of choice' garri or eba, fufu or pondo yam etc.
