Caribbean Dinner! Delicious Rice and Peas

Hello Lovelies,
So tonight dinner is all about rice, peas, coconut milk, beef and more?
Needless to stay, we have a Caribbean inspired dinner! Whoop!
Super easy to make.
What you will need:
A can of coconut milk spilt in half
Half a can of chopped tomatoe
Diced Beef 250g should be alright
Diced Lamb 125g should be fine
Pototaoe(6 small ones peeled)
Basmati rice
125 g of peas
1tsp of curry powder
2 cubes of knorr
1tsp of all purpose seasoning
1 scotch bonnet pepper (optional)
To cook this:
Soak your fresh red beans over night in a bowl (or you can use canned ones), a can will be enough.
Slow cook for an hour checking it to ensure its soft enough.
In a different bowl, rinse basmati rice about 4 times to get rid off the starch.
Per boil rice in a slow heat for 3 mins, rinse again to get rid off the starch.
Add peas or red beans, half a can of coconut milk and leave to simmer for 5-8 mins. Check for consistency.
Once soft, you can switch off the gas or cooker.
In a different pot, slow cook beef/lamb, add ingredients, 1 cup of water and let it cook for 30 mins.
Keep checking to make sure it has enough water.
Check in 30 mins, add potatoes and enough water to boil for another 30 mins.
Once meat start to soften, add half can of 1/2 of coconut milk and half a can of chopped tomato
Leave to simmer for another 20 mins until food is sauce is completely thick.
P.S. You can add more curry powder, 2 tsp of flour for more thickness(optional). Simmer for 5 mins, stir and switch off the gas or cooker
